These are my all-time-favorite muffins; my go-to breakfast or snack. My “you haven’t eaten anything yet? Here, have a muffin” saviors. I love these muffins. My 3-year-old loves these muffins. Everyone I have ever made these for, loves these muffins. The best part? They’re super healthy, super simple, and SUPER easy!!

Banana Chia Muffins
These Banana Chia Muffins are the perfect on-the-go snack; healthy, light and delicious!!!
Servings 12 muffins
Ingredients
- 1 3/4 cups Oat Flour
- 1/4 cup Ground Flax Meal
- 1 cup Chia Seeds
- 4 tsp Baking Powder
- 1 tbsp Ground Cinnamon
- 1/2 tsp Salt
- 1 tsp Vanilla Extract
- 2/3 cup Non-Dairy Milk (I always use So Delicious Unsweetened Original Coconut Milk)
- 2/3 cup Pure Maple Syrup
- 2 Mashed Bananas
- 1/2 cup Chopped Walnuts (optional)
Instructions
- Preheat your oven to 300 degrees Fahrenheit
- Combine all ingredients into a large mixing bowl
- Pour/Spoon into greased muffin tins
- Bake for 25 minutes
- Enjoy!!! (These keep for up to a week in the refrigerator, and longer in the freezer!!)
