How to Make The Best Banana Chia Muffins

These are my all-time-favorite muffins; my go-to breakfast or snack. My “you haven’t eaten anything yet? Here, have a muffin” saviors. I love these muffins. My 3-year-old loves these muffins. Everyone I have ever made these for, loves these muffins. The best part? They’re super healthy, super simple, and SUPER easy!!

Banana Chia Muffins

These Banana Chia Muffins are the perfect on-the-go snack; healthy, light and delicious!!!

Ingredients

  • 1 3/4 cups Oat Flour
  • 1/4 cup Ground Flax Meal
  • 1 cup Chia Seeds
  • 4 tsp Baking Powder
  • 1 tbsp Ground Cinnamon
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract
  • 2/3 cup Non-Dairy Milk (I always use So Delicious Unsweetened Original Coconut Milk)
  • 2/3 cup Pure Maple Syrup
  • 2 Mashed Bananas
  • 1/2 cup Chopped Walnuts (optional)

Instructions

  • Preheat your oven to 300 degrees Fahrenheit
  • Combine all ingredients into a large mixing bowl
  • Pour/Spoon into greased muffin tins
  • Bake for 25 minutes
  • Enjoy!!! (These keep for up to a week in the refrigerator, and longer in the freezer!!)
