How To Make the Fluffiest Oat Waffles

When I was younger, breakfast on the weekend was a special treat. We would pull a chair up to the kitchen counter, get out the box of Bisquik and help our Dad make Belgium Waffles. He would pull out these special glass bowls that he would pour syrup into, warm them up and place them in the center of our dishes. After the waffles were finished, we would set them up around the bowl, and add some fruit to “make it look pretty”. I can still smell the warm syrup and waffles as if I were back in the kitchen.

Fast forward a few years – I’m standing in my own kitchen, my son has pulled a chair up to the counter so that he can help me make waffles!! The recipe has changed a bit, but the sentiment and experience has not 🙂 There is nothing quite like the smell or taste of a warm waffle in the morning and these will definitely not disappoint!!

Fluffy Oat Waffles

These waffles are my absolute favorite!! They are perfectly crispy on the outside, soft and fluffy on the inside!! My go-to for every morning!!

Equipment

  • Waffle Iron

Ingredients

  • 1 1/2 cups Oat Flour
  • 2 tsp Baking Powder
  • 1/2 tsp Salt (I always use sea salt, and grind it in)
  • 1 tsp Cinnamon (I actually just kind of "dump" some in…I'm a HUGE cinnamon fan, but if you're not – no big deal!!)
  • 1/2 tsp Allspice you can use nutmeg if that is all you have!
  • 3/4 cup Nut Milk or Ripple (Pea Milk) I love using Ripple because you get the added benefit of protein!
  • 5 tbsp Melted Plant-Based Butter or Refined Coconut Oil
  • 2 Flax Eggs (1 tbsp Ground Flax + 3 tbsp Water)
  • 2 tbsp Pure Maple Syrup
  • 1 tsp Vanilla Extract optional

Instructions

  • Combine 1 tbsp Ground Flax and 3 tbsp water in a small-medium bowl. Let sit for ~5 minutes
  • Combine all dry ingredients together in a large bowl
  • Add the remaining wet ingredients to the Flax Eggs in the smaller and mix together
  • Pour the wet ingredients into the dry ingredients. Mix to combine. Let this sit for a few minute while you warm up the waffle iron.
  • Pour about a cup of batter onto the center of the waffle iron and let it cook for about 5 minutes. The waffle should be golden brown, and the edged solid – not runny
